This pasta recipe is a regular weekly meal for myself and it is about as simple as it gets to cook. You may want to add more herbs and spices depending on your taste. However here are the basics…
Ingredients:
- 1 package brown rice spaghetti or your favourite style of pasta.
- 1 can coconut milk
- Tomato sauce – I usually use a good organic tomato pasta sauce. Whichever you use just make sure to read the label to be sure it does not contain any wheat.
- Bunch of Spinach
- 1 chopped Carrot
- A little chopped onion
- Sun-dried tomatoes
- Toasted sunflower or pumpkin seeds
Directions:
Cook your pasta according to the directions on the package.
While the pasta is cooking soak the sun dried tomatoes, sauté the onion and steam the spinach and chopped carrot.
Once the pasta is done, drain it and then throw it back in the pot.
Add 1/2 can coconut milk (if you have a large can) or a full can if you have the smaller can.
Add a few tablespoons of the tomato sauce. Mix together and add the veggies and seeds on top.
